Will it submit the destruction to Metrc on its own?

No. WebRun only reconciles the weight and reason code, then drafts the internal witness log in DocuSign. Your compliance lead sends it to the two witnesses, and submitting the destruction event in Metrc stays a licensed employee's action.

Who has to sign the destruction log?

Your state's required two witnesses, typically the employee who destroyed the material and a supervisor or compliance officer. WebRun drafts the envelope with both fields but never signs on anyone's behalf.

What happens if the weight doesn't match Metrc?

It flags the mismatch instead of drafting the log, so your compliance lead can correct the record in Trym or Metrc before a witness ever signs an inaccurate document.
