Where does the publish date come from?

From the campaign collection's name or notes in Unsplash. Give each collection a clear date and WebRun schedules against it.

What happens to photos without a planned date?

They're flagged in the Teams post as unscheduled, so someone can assign them a date instead of them sitting unused.
