Questions, answered

Will it message parents without the teacher seeing the note?

No. Every note sits on a Trello card until the teacher moves it to Approved. Nothing reaches a family that a teacher has not read, and any note the teacher holds back is never sent.

Does one family ever see another child's progress?

No. Each note is sent as a single message to the number recorded for that child, never as a group message, so one family only ever sees their own child's week.

What if a child barely used the app that week?

The note says so plainly and kindly, without comparing the child to classmates. The teacher can edit or hold the card back, which is exactly why every note waits for approval.
