How accurate is the projected date?

It is an estimate from the recent daily gains Social Blade reports, so the page records the growth rate behind it and flags when the date shifts by more than a week.

Can it track channels I do not own?

Yes. Social Blade figures are public, so any channel you add to the tracking list gets the same countdown without needing access to its account.
