It only reads Denticon to check which setup steps are live. It does not create offices, providers, or accounts there. The tracking and task updates happen in Asana, and your integration team does the actual Denticon build.

How does it know which checklist to use?

It reads whether Salesforce marks the location as an acquisition or a de novo build and starts the matching Asana template, since a bought practice and a ground up build have different onboarding steps.

What if an office is past its go live date?

It puts that office at the top of the weekly Asana status and flags any Denticon setup step still outstanding, so a launch that is running late is impossible to miss.
