How many coins can be on the watchlist?

As many as CoinGecko's watchlist supports. The digest automatically ranks whatever is on the list, so adding or removing coins updates tomorrow's digest without any setup change.

Where does the full data go if I want more than the Slack summary?

Every full daily snapshot is saved as a CSV in Google Drive, so you can open it any time to see prices and ranks beyond the top movers.
