Will it email the customer on its own?

No. Every chaser is saved as a Gmail draft for a staff member to review and send. The message does not reach the customer until a human approves it.

What if the customer already approved but the status was not updated?

It reads the live job status in The Edge each run. If a job is no longer in an awaiting-approval state, it is skipped automatically that day.

Can I change the two-day threshold before a chaser is drafted?

Yes. You can set a different wait period during setup, for example three days for CAD proofs and one day for simple design confirmations, to match your workshop's flow.
