How far back does the rank comparison go?

It compares against the prior week by default. Because results accumulate in Google Sheets, you can look back as many weeks as the sheet has been running.

Does it make any pricing or menu changes?

No. The report is read-only. All decisions about pricing, promotions, or menu changes are yours to make after reviewing the results.
